Delicious and Easy Tuna Mayo Pasta Recipe for Busy Parents

Evelyn's tuna pasta

Hello readers... Today I had a little helper and her choice in lunch was this easy tuna pasta dish. This is a childhood lunch for me and I've now past it on. Its such and easy tuna pasta recipe when you are a busy parent and even my four year can do it ;). Evelyn enjoys getting involved in the kitchen so I bought her her own set of child friendly knives to help me out when I cook. Its also a great way of teaching her some life skills as well as a good little task for us to do together.


Ingredients:


Dried pasta 500g

2 tins of tuna in spring water

Bell peppers x1 or a half of 2 different colours for variety, diced

Cucumber x1/4 of a large diced

Red onion x 1/2 diced

Salt and pepper

Mayonnaise 150g

Sprinkle of white pepper, not needed but I think it gives it an extra suttin' suttin'!

On the side, handful of mixed salad

Squeeze of lime juice all over


Lets make it:


  1. Put pasta in a pan of salted water to boil for allocated time on pack, 8-10 mins.

  2. While pasta is cooking lets prep our salad, chop cucumber, bell peppers, red onion in the small cubes.

  3. When pasta done, rinse and drain.

  4. Add pasta to a mixing bowl.

  5. Add all other ingredients, cucumber, peppers, onion, mayonnaise, salt and pepper and mix it all together.

  6. Portion out a plate or bowl with your side salad and squeeze of lime.

  7. And voila, super easy!
