How to Make Egg Fried Rice: A Simple Takeaway Style Recipe!

Scrummy egg fried rice!

Hello lovely readers! I'm going to be giving you my simple and delicious egg fried rice recipe. A chippy favourite in the northwest and certainly one of mine.

After failing for years to get it to taste like the takeaway down the road. I finally have a recipe that helps me avoid ordering in, with the help of my beautiful friend from Vietnam, Kim. I met Kim through our daughters becoming “best friends forever” at nursery and now in school together. We have become friends after a few years of playdates, kids parties and me being Kim's number 1 fan of her YouTube channel. Turns out she is an amazing cook and I'm always asking her for recipes.

List of ingredients:

  • Rice (I usually use basmati, however long/short grain or jasmine are often used) 4 servings.

  • Olive oil 1-2 tablespoons

  • Ginger chopped or minced

  • Garlic - 2 cloves chopped or minced

  • Soy sauce - 2 table spoons

  • 2 eggs whisked

  • 1 cup of vegetables of your choice, I use peas, carrots, corn, broccoli, asparagus, kale, spinach, spring onion.

  • RosDee Thai pork seasoning

How to make:

Using a frying pan or wok.

  1. Crack your eggs and whisk in a bowl, leave to one side.

  2. Use a tablespoon of olive oil in a pan and warm.

  3. Add your garlic and ginger and cooked for a couple of minutes or until soft.

  4. Add any veggies and fry on low heat for few minutes until almost soft.

  5. Add rice, flick together and fry, I use cold rice from day before or rice cooked and cooled. It will go clumpy If you use rice straight from the boil.

  6. Make a little hole in the middle of your ingredients and add eggs. Use a fork and scramble the eggs.

  7. When almost cooked, you can start mixing eggs through the rice and vegetables.

  8. Add a tablespoon of RosDee seasoning.  This is the scrumptious addition that makes the dish taste of that lovely take away rice.

  9. Add 1 to 2 tablespoons of soy sauce, whichever your preference is. I like a bit of a soy sauce taste.

  10. Flick and toss together again, you can add spinach and spring onions for extra minute, but I prefer them both uncooked.

  11. Serve in a bowl or as a side dish.

  12. You can also add chicken and make a chicken fried rice.

  13. ENJOY!

Thanks for checking out my post!
